Poke Bowl: Sushi’s New Generation
Poke (po-keh) is a sushi dish influenced by Hawaii. It’s a salad of raw fish. Poke originated with fisherman seasoning scraps from their catch to serve as a snack. It’s then served over rice with veggies and umami-packed spices on top. Poke has been popular in Hawaii for decades, and the poke bowl has become the healthy option in America in the last year or two.
Japanese and other Asian cuisines have profoundly affected traditional poke spices. They season the fish with soy sauce and sesame oil, then they top it with furikake and wasabi.

The bowl’s first layer. If you come from a sushi background, short-grain Japanese sushi rice is ideal for serving with raw fish, although plain white rice can also be used.

The most crucial elements in a poke bowl are fresh fish or seafood. In Hawaii, tuna is the most commonly used ingredient in poke bowls. Here are several more poke-friendly fish:

Salmon is also frequently used in pork bowls. There’s also mackerel, mussels, and scallops.
- Seaweeds and Veggies As Mix-Ins
Fish is marinated with seaweed. Wakame with hijiki is a common combination. Toppings are made from nori flake. Avocado and shaved onion go well with raw fish. Seaweed and vegetables give flavor and crunch.
- Soy Sauce and Sesame Oil As Seasoning Sauces
Commonly used seasonings include soy sauce, tamari, sesame oil, and ponzu (citrus soy sauce). To give a refreshing touch, try yuzu sauce. Wasabi is a popular spicy sauce. Gochujang paste is another alternative!
- Sesame Seeds and Furikake As Toppings and Garnish
Add white / black sesame seeds and spring onion for extra flavor. Adding furikake and shichimi will also increase the umami!
