Poke Bowl: Sushi’s New Generation
Poke (po-keh) is a sushi dish influenced by Hawaii. It’s a salad of raw fish. Poke originated with fisherman seasoning scraps from their catch to serve as a snack. It’s then served over rice with veggies and umami-packed spices on top. Poke has been popular in Hawaii for decades, and the poke bowl has become the healthy option in America in the last year or two.
Japanese and other Asian cuisines have profoundly affected traditional poke spices. They season the fish with soy sauce and sesame oil, then they top it with furikake and wasabi.

Add white / black sesame seeds and spring onion for extra flavor. Adding furikake and shichimi will also increase the umami!
